Making Process:

  1. Sap Collection:
    • The process begins with the collection of sap (also known as neera) from the flower buds of palm trees. Skilled tappers climb the trees and make incisions on the flower buds to collect the dripping sap in clay pots.
  2. Filtration:
    • The collected sap is then filtered to remove any impurities such as dust, insects, or debris that may have entered during collection.
  3. Boiling:
    • The filtered sap is transferred to large, open pans and boiled over a wood-fired stove. This process requires constant stirring to prevent the sap from sticking to the pan and to ensure even heating.
  4. Concentration:
    • As the sap boils, it begins to thicken and change color. The water content gradually evaporates, concentrating the sugars and nutrients in the sap. This process can take several hours, depending on the quantity of sap and the desired consistency.
  5. Cooling and Molding:
    • Once the sap reaches the desired consistency and deep brown color, it is removed from the heat and allowed to cool slightly. The thickened syrup is then poured into molds or shaped by hand into blocks or rounds.
  6. Solidification:
    • The molded jaggery is left to cool and solidify at room temperature. Once solidified, it is removed from the molds and cut into smaller pieces if necessary.
  7. Packaging:
    • The solid jaggery blocks or pieces are then packaged in airtight containers or wrapped in natural materials to preserve freshness and prevent contamination.
